Do you like coconut desserts? You MUST try our Samoa truffles. Like the boy scout cookie, these truffles are full of coconut, caramel, and chocolate flavors. Or try our recipe for coconut biscotti! 

The most delicious white cake recipe from scratch is used to make this perfect coconut cake! Soft, moist crumb with coconut icing and cream cheese!

Ingredients

-FOR THE CAKE:

¾ cup buttermilk

5 egg whites, room temperature

1 ¾ cup granulated sugar

¾ cup unsalted butter softened to room temperature

½ tsp almond extract

2 ½ cup cake flour

1 tsp vanilla extract

½ tsp kosher salt

1 cup shredded, sweetened coconut

1 Tbsp baking powder

-FOR THE FROSTING:

½ cup unsalted butter softened

2 cups shredded, sweetened coconut

¼ cup heavy cream

5 cups powdered sugar

1 package (8 oz) cream cheese, softened to room temperature

Instructions:

FOR THE CAKE:

Beat egg whites and ¼ cup buttermilk in a small bowl until lightly blended. Put it aside. 

In a bowl, beat the butter, sugar, vanilla, and almond extracts on medium speed for 2 minutes and scrape the sides of the bowl as needed. Add the dry ingredients and mix until well mixed. Add the protein mixture until completely mixed. Add the rest of the milk and beat for 3-4 minutes, scraping the sides of the bowl. Fin coconut. 

Spray baking spray into two 9-inch cake pans. Pour the dough into pans and bake in an oven at 350 degrees for 26-28 minutes. Remove and allow to cool completely on a wire rack. 

FOR THE FROSTING:

Beat the butter and cream cheese with a whisk in an electric mixer for 3 minutes. Add the powdered sugar and cream. Beat for another 4-5 minutes and scrape the sides of the bowl as needed. 

Place a layer of cake on a cake stand to assemble Pour a large amount of icing over it and smooth with a staggered spatula. Expose with the second layer of cake. Apply icing to the entire cake. To add the coconut to the top and sides of the cake, place the cake stand on a baking sheet (to trap excess coconut). Fill your hand with coconut and gently press on the sides of the cake. Repeat until the desired amount of coconut is applied.
