 No-Fail Amish White Bread


Amish white bread is a light and tender sandwich bread that is easily cut without crumbling. Its velvety texture and sweet taste make it a hit for children. It freezes fine. Recipe for beginners. 
Ingredients
1 ½ teaspoons salt
2 tablespoons butter, melted
US Customary - Metric
1 cup water, 110F
1 cup milk, 110F
⅔ cup sugar, (you can use less)
¼ cup vegetable oil, -- coconut oil works really well here (melt it first and let it cool to 100F)! OR use melted butter
5-½ cups bread flour, you may need a little more or a little less
1 ½ tablespoon active dry yeast
Instructions:
Conventional method
Dissolve sugar in warm water and milk in a large bowl.
Whisk in the yeast.
Let stand for 5 to 10 minutes or until the yeast mixture becomes foamy. 
Add 1 cup of flour. 
Add salt and oil. 
While the mixer is running, add the rest of the flour, one cup at a time until the dough comes out of the bowl. 
Knead in the machine for about 5 minutes. 

Hand kneading

If you are kneading by hand, mix the flour into a sticky dough, turn the dough over a lightly floured surface and knead it for 10 minutes or until the dough is smooth and elastic; add flour as needed. 

Rising and shaping

Grease a large bowl and place the dumpling in it. 
Grease the top of the dough, and then cover it with a damp cloth. 
Let it rise until it doubles its dough. It will take about an hour. 
Blow out the dough. 
Knead for about three minutes and cut in half. 
Let it stand for five minutes. Form bread and then place in 9 x 5-inch greased loaf pans.
 Brush the tops with melted butter.
Let sit for 30 minutes or until the dough has risen on the trays about an inch.
Bake at 350 degrees Fahrenheit for 30 minutes or until the loaves sound hollow when knocked.

For a soft crust
For a smooth crust, brush the top and place a clean cloth over the baked bread as soon as they are removed from the oven. Let them cool for about 5 minutes and then remove them from the molds to cool completely and cover them with the tea towel again. 

Bread machine instructions

Add ingredients to your bread maker in the order recommended by the manufacturer.
Choose the cycle of white bread.
Press “Start”.
Once the dough has risen and the second kneading cycle begins, turn off the machine.
Press Start again to reset the device.
The dough is raised a second time before baking.
