 Cajun Chicken Pasta


With its creamy cajun sauce and bites of tender pasta and chicken, this Cajun Chicken Pasta is a dinner winner. It's one of the quickest dinners, taking less than 30 minutes to prepare.
Ingredients
8 ounces farfalle pasta (or your favorite type)
Fresh vegetables, if desired, see note
1/2 teaspoon salt, more to taste, if needed
1 pound boneless skinless chicken breasts (about 2 breasts), cut into bite-size pieces
2 teaspoons Cajun seasoning, more or less, to taste
1 cup milk
3 cloves garlic, minced
3/4 cup freshly grated parmesan cheese
1/2 teaspoon freshly ground black pepper
2 Tablespoons butter
4 ounces cream cheese, softened and cut into small pieces
Instructions:
Cook the pasta according to the package directions until it is al dente. Set aside after draining and rinsing with cold water.
Melt the butter in a large pot or skillet over medium heat. Cook for 30 seconds after adding the garlic.
Season the chicken (and any desired vegetables*) with cajun seasoning. Cook for 3-4 minutes, or until the chicken is nearly done.
Stir in the milk and cream cheese until the cream cheese has melted and the sauce is smooth about 2-3 minutes.
Add the pasta, parmesan cheese, salt, and pepper to taste. Serve right away.

Notes :

*Vegetables: I frequently add vegetables from my refrigerator to the pasta. Sliced bell peppers would make a more authentic cajun dish. Spinach, broccoli, asparagus, zucchini, or mushrooms are also good additions.
Otherwise, this is a great pasta to serve with roasted vegetables.
Cajun Chicken Pasta with a Healthier Twist:

Use whole grain pasta instead.

Add any vegetables you want to use up from your refrigerator, such as sliced bell peppers, spinach, asparagus, mushrooms, zucchini, and so on.

Substitute olive oil for the butter, or reduce the amount of butter by half.

Make use of low-fat cream cheese.
Make use of skim milk.
Leave out the parmesan cheese.
Preparation Instructions: Steps 2-4 of the recipe must be completed (make the creamy sauce with cooked vegetables and chicken). Allow cooling before storing in the refrigerator. When ready to serve, cook the noodles, reheat the sauce, and then add the pasta and cheese to the sauce.
