 Caramel Apple Bombs

INGREDIENTS:
Cooking spray
2 tbsp. cream
1 tbsp. butter, plus 2 tbsp melted butter
3/4 c. powdered sugar
1/3 c. cinnamon sugar
2 tbsp. brown sugar
8 caramel candies
Pinch of kosher salt
1/2 tsp. cinnamon
2 apples, finely chopped
1 (16.3-oz) can refrigerated biscuit dough
DIRECTIONS:
Preparation of apples: Preheat oven to 350° and grease a medium bowl with cooking spray. Melt 1 tablespoonful of butter in a medium skillet over medium heat. Add apples, brown sugar, cinnamon, and salt. Cook until apples are tender, about 5 minutes. Put it aside.
Remove the cookies from the tin and stretch them slightly. Place a caramel candy and a large ball of apple mix in the middle of a cookie and form a ball that holds the loose ends of the cookie dough. Place in a baking dish and spread with melted butter.
Sprinkle with cinnamon sugar and bake until golden brown for 30 to 35 minutes. In the meantime, make the icing: Mix the powdered sugar and cream in a medium bowl. When the cookies come out of the oven, sprinkle with icing and serve.
